Two days in Cappadocia is just right for a first visit. It's enough for a balloon flight, both of the big tours and a sunset in the valleys, with time left over to sit on a terrace and stare. The one thing you can't plan is the wind, so this itinerary quietly plans around it.
The night before
Arrive the evening before Day 1 and check in somewhere in Göreme or Uçhisar. Balloon pick-ups happen in the dark, and you want to be ten minutes away, not an hour. Book the flight for your first morning. If it's cancelled, you still have the second.
Day 1: balloons, fairy chimneys and a pink sunset
Your alarm goes off at an hour you didn't know existed. Worth it. You're picked up in the dark, handed a coffee, and by sunrise you're floating over the valleys with a hundred other balloons. Back at the hotel for a late breakfast and a slightly giddy feeling.
Late morning, join the Red Tour: the Open-Air Museum's painted churches, the chimneys of Paşabağ, the camel-shaped rock at Devrent, the potters of Avanos. As the sun drops, saddle up for a horseback ride or jump on an ATV through Rose Valley, just as the rock turns pink and gold.
Day 2: underground, then into the valley
If yesterday's flight was grounded, this morning is your second chance. If you already flew, set an alarm anyway and watch the balloons rise from a viewpoint or your terrace. It's a completely different, equally lovely experience.
Then the Green Tour. Duck through the tunnels of the Derinkuyu or Kaymaklı underground city, walk the river path through Ihlara Valley, eat lunch beside the water, and finish at the cliff-carved Selime Monastery. Dinner in Göreme, or head to Ürgüp for a glass of local wine. You've earned it.
