Picture it. You open the curtains of a room carved into the rock, step onto the terrace in a blanket, and the sky is full of balloons. Where you stay in Cappadocia decides how often that happens, and what your evenings look like. Göreme, Uçhisar and Ürgüp are only a few minutes apart, but they feel like three different holidays.
Göreme, for being in the middle of everything
Göreme is the Cappadocia you've seen on Instagram: fairy chimneys between the houses, cave hotels stacked up the hillside, and balloons launching from just outside the village. You can walk into the valleys from your door, the Open-Air Museum is down the road, and rooftop breakfasts come with the best seat in the house.
It has the widest range of places to stay, from family-run guesthouses to boutique cave suites. The trade-off is that it's also the busiest. Evenings can feel a bit like a tour-bus car park, in a charming way.
Uçhisar, for views and a bit of peace
Uçhisar sits higher up, around a giant rock castle riddled with old rooms and pigeon houses. It's the highest point in the area, so hotels here look out across Pigeon Valley and the whole Göreme basin. When the balloons go up, you get the panorama rather than the close-up.
It's quieter and generally a little more upmarket. Perfect for couples. You'll want transfers or a car to get around, though.

Ürgüp, for good food and a glass of wine
Ürgüp is an actual town, with a proper main street, restaurants, wine bars and wineries nearby, plus old stone mansions turned into lovely boutique hotels. It's a short drive from the main valleys and launch sites, but if your idea of a great evening is a long dinner and a local red, this is your place.
Cave room or regular room?
Sleep in a cave at least once. The rooms are carved into the soft rock, so they stay cool in summer and cosy in winter, and there's something wonderful about waking up inside a hillside. They can be a bit dark, and some involve steps, so check if accessibility matters to you. Many hotels have both cave and stone-built rooms. Ask which one you're getting.
How many nights?
Two at the very least. Three if you can. That gives you a spare morning if the balloons are grounded, plus time for both the Red and Green tours without sprinting.
